The Rock 21 is designed to cut cheese into a programmable number of discs.

The discs can have a fixed or variable thickness, according to production needs.
The machine can be programmed both for the cut in half of the shape and for its subdivision into discs, with variable height.

It also offers the possibility of removing the upper and lower plates from the rind, without creating waste, and preparing the cheese for packaging.

The centering of the cheese takes place vertically and, if necessary, it is possible to extract the central part of the wheel with a customizable diameter, to subsequently obtain pieces of particularly reduced weight. The extraction of the "heart", in fact, prevents the creation of slices with too thin tips, which risk breaking or crumbling.

Operating mode:

  • Vertical centering of the shape.

  • Extraction, if required, of the heart.

  • Preparation of cheese for cutting or division into discs.

  • Milling of the rind and cutting of the cheese into two equal halves or division into discs of varying thickness.

  • Possible removal of the upper and lower plates of the crust, with programmable thickness and division of the cheese into the number of portions desired for packaging.
